Today I am putting a twist on moms classic meatloaf. I have traded in my go to lean beef and substituted it with ground chicken for an easy to make chicken salsa meatloaf. Ground chicken is a healthy choice for recipes as it is lower in calories and fat then many meats including beef.
Below is my easy no fail recipe for ground chicken salsa meatloaf.
Chicken Salsa Meatloaf Ingredients
- 2 pounds of ground chicken
- 1/3 cup of Old El Paso Salsa
- 3 large eggs beaten
- 2 cups of chopped peppers
- 1 package of dry Lipton onion soup mix ( or use 1/2 cup of onions)
- 2 cups of dry bread crumbs
In a large bowl, combine all your ingredients and mix. Form into a loaf and place into a meatloaf pan. Bake at 350 degrees F (175 degrees C) for 2 hours. 10 min before finished pull the chicken meatloaf with 1/4 cup of salsa. Return to oven and bake for 10 more mins.
You would never guess that the meatloaf was made with lean ground chicken.
The chicken salsa meatloaf was super moist from the salsa, which not only keeps it from drying out, but also gives it a ton of flavor. You can also substitute the chicken for ground turkey. I think I’ll try that the next time I make it.
The salsa chicken meatloaf also makes a great next day leftover. For the second night, my husband made a delicious omelet for dinner filled with sautéed peppers, tomatoes and baby spinach. We served it along side the chicken salsa meatloaf.
We still have some chicken meatloaf left over. What could be better than a chicken salsa wrap using left over meatloaf? I don’t need to tell you what is for dinner tomorrow.
